STUFFED GRAPEVINE LEAVES
Sarma means ‘”wrapped thing.” It is a term used for a variety of grape vine leaves in olive oil stuffed with rice fillings and spices. Sarma are cooked and served with generous amounts of olive oil. The oil helps the rice and other ingredients bind while cooking and adds to the wonderful flavor. More oil is drizzled over the top before serving. This helps keep the sarma plump and moist. It also preserves the dish, so it keeps longer in the refrigerator.
It can be eaten hot or cold. Some like them hot and served them as a side dish accompanying the main course.
