The striploin, also known as sirloin, is found along the spine in the hindquarter, running from the ribs to the rump. The sirloin roast is succulent, tender, and flavorsome and can be further cut into steaks.
Wagyu ribeye steaks are cut from a wet-aged Signature Wagyu prime rib roast. Ribeye steaks are more richly marbled than other cuts, making the beef rib steak incredibly flavorful and tender.
A Wagyu Tomahawk is basically a Wagyu Rib Eye steak with the bone left in. The meat is the same as the Rib Eye (which is also known as Entrecote), cut from the rib part of the steer.
